It can effectively inhibit the activity of lysine enzyme and reduce the oxidized melanin to colorless reducing melanin, so as to achieve the effect of whitenin. Lemon powder is manufactured with spray drying technology. The process includes crushing and juicing fresh fruit, concentrating the juice, adding maltodextrin into the juice, then spray drying with a hot gas, collecting dried powder and sieving the powder through 80 mesh.
